Situated in the hip and newly refurbished St Margaret’s complex in Surry Hills, Beluga is right at home amongst some of the city’s finest restaurants. Yet, true to visionary chef Opel Khan, Beluga is breathing new life into Sydney’s hottest food district, and indeed Sydney itself, with Opel’s progressive and perfectly executed approach to food.

A world first, Opel has created at Beluga a style of cooking never before seen. Blending the refined flavours of French cuisine with the pungent and colourful tastes of Indian, Opel draws upon his heritage from Bangladesh and his lifelong respect for avant garde technique, to bridge two seemingly disparate worlds. What eating at Beluga proves is that anything is possible in the hands of a true artist. All it needed was vision.
Opened in January 2008, Beluga has already been rated one of the highest ranking restaurants on Eatability.com, a title bestowed upon the restaurant by Sydney’s diners themselves. Critics too have been astounded, naming Beluga among Australia’s best of the best. Opel’s nouveau French-Indian cuisine, with envy-inducing offerings such as Sea Scallops with Cauliflower Puree & Cumin Avocado Crème Brulée, Deconstructed Tandoori Chicken with Butter Chicken Jus & Lime Air and Chocolate Ganache with Chickpea Dust can be enjoyed either through his beautifully-crafted degustation menu (with or without wine pairing) or his seasonal a la carte menu.
And for the perfect backdrop, Beluga’s setting, where convivial dining meets bar, is vibrant, sleek and fun. Filled with melting tones of deep browns, luscious creams and splashes of Indian colour, Beluga bubbles with life and simmers with incredible food.
